Creamy Chicken Pasta Skillet

What You’ll Need:

Yield: 6 servings (1 1/3  cup each)

 

  1. 8 ounces dry rigatoni pasta, uncooked
  2. PAM® Original No-Stick Cooking Spray
  3. 1-1/4 pounds boneless skinless chicken breasts, cut into 1-inch pieces
  4. 1/2 cup chopped onion
  5. 1 can (14.5 oz each) Hunt’s® Petite Diced Tomatoes, undrained
  6. 1 can (10-3/4 oz each) condensed cream of mushroom soup
  7. 1 cup frozen green peas, thawed
  8. 6 tablespoons shredded Parmesan cheese

Directions:

  • 1. Cook pasta according to package directions, omitting salt. Meanwhile, spray large nonstick skillet with cooking spray; heat over medium-high heat. Add chicken and onion; cook 5 minutes or until chicken is no longer pink in centers, stirring occasionally.
  • 2. Stir in undrained tomatoes and soup; cook 5 minutes or until hot, stirring occasionally. Add peas; mix well.
  • 3. Drain pasta; place in large serving bowl. Add chicken-tomato mixture; toss to coat. Sprinkle with cheese.

We are finishing up week (1) of Give Every Night New Flavor. With another busy weekend coming up I was looking for a great meal for my crock pot.  Stay tuned for our review and pictures of this yummy-rific meal!

Rosemary Pot Roast

What You’ll Need:

Yield: 6 servings (1 1/2  cup each)

 

  1. PAM® Original No-Stick Cooking Spray
  2. 2 pounds boneless beef chuck roast
  3. 3 small baking potatoes, cut into 1-1/2-inch pieces
  4. 1 large onion, cut into 1-1/2-inch pieces
  5. 1 can (14.5 oz each) Hunt’s® Diced Tomatoes with Rosemary & Oregano, undrained
  6. 1 can (10-3/4 oz each) condensed reduced fat and sodium cream of mushroom soup
  7. 1/2 cup water
  8. 2 tablespoons Hunt’s® Tomato Paste
  9. 2 teaspoons dried rosemary
  10. 1/2 teaspoon salt

Directions:

  • 1. Spray inside of 4 to 5-quart slow cooker with cooking spray; set aside. Trim excess fat from beef; discard. Cut beef into 1-1/2-inch pieces; set aside.
  • 2. Combine potatoes and onion in slow cooker. Top with beef and remaining ingredients. Cook on HIGH 5 hours or on LOW 10 hours or until beef is tender.

Here it is Day 4 of Give Every Night New Flavor. With temperatures not getting out of the 50′s today I’m sure looking for something warm for super tonight.  We had homemade chicken noodle soup last night.  Sure wish I was this recipe first because it looks delicious! Spicy Chicken Chili

What You’ll Need:

Yield: 6 servings (1 cup each)

 

  1. PAM® Original No-Stick Cooking Spray
  2. 1-1/4 pounds boneless skinless chicken thighs, cut into bite-size pieces
  3. 1-1/2 cups sliced celery
  4. 1 can (15 oz each) Rosarita® Premium Whole Black Beans, drained, rinsed
  5. 1 can (14.5 oz each) Hunt’s® Fire Roasted Diced Tomatoes with Garlic, undrained
  6. 1 can (8 oz each) Hunt’s® Tomato Sauce
  7. 2 tablespoons red pepper sauce
  8. 1/3 cup crumbled blue cheese

Directions:

  • 1. Spray large saucepan or Dutch oven with cooking spray; heat over medium-high heat. Add chicken and celery; cook 5 to 7 minutes or until chicken is no longer pink, stirring occasionally.
  • 2. Stir in beans, undrained tomatoes, tomato sauce and pepper sauce; bring to a boil. Reduce heat; cook 10 to 15 minutes or until chicken is tender and flavors are blended. Top each serving with blue cheese. Add more pepper sauce, if desired.

Day 3 of Give Every Night New Flavor. Here is your recipe for tonight’s quick and easy meal.  Enjoy!

Shredded Pork with Mushrooms

What You’ll Need:

Yield: 8 servings (1 cup each)

 

  1. PAM® Original No-Stick Cooking Spray
  2. 3 pounds boneless pork shoulder, cut into large pieces
  3. 2 cans (14.5 oz each) Hunt’s® Diced Tomatoes with Spicy Red Pepper, undrained
  4. 1 can (6 oz each) Hunt’s® Tomato Paste
  5. 1 pkg (0.87 oz each) pork gravy mix
  6. 3 tablespoons packed brown sugar
  7. 1 pkg (8 oz each) sliced fresh mushrooms

Directions:

  • 1. Spray inside of 4 to 5-quart slow cooker with cooking spray. Combine remaining ingredients in slow cooker.
  • 2. Cover; cook on LOW 8 to 10 hours or on HIGH 4 to 6 hours or until meat is tender. Separate pork into smaller pieces.
